Authentic Senegalese Ginger Juice

Serves: 6-8

Ingredients

  • 250 g fresh ginger, peeled and chopped
  • 1 litre pineapple juice (100% juice)
  • Juice of 3 lemons
  • 15 fresh mint leaves
  • 750 ml cold water
  • 100-150 g sugar (adjust to taste)
  • Ice cubes (optional)

Instructions

  1. Peel and roughly chop the ginger.
  2. Blend the ginger with 500 ml of water until smooth.
  3. Strain the mixture using a fine mesh strainer or cheesecloth.
  4. Add the pineapple juice, lemon juice, mint leaves, remaining water, and sugar.
  5. Stir well and refrigerate for at least 2 hours to allow the flavours to develop.
  6. Serve chilled over ice.

Tip: For an even more authentic flavour, let the mint leaves steep in the juice overnight before serving.
